I don't know if you are able to fix this, but if you would like some more data about this problem, I have done some testing. Here are my results:
I noticed that when I press a keyboard key (Esc, Space, Enter) during the introduction movie the screen does not become blank, and it shows the menu properly.
Only when I click the left mouse button, the screen becomes blank. Then I have to Alt + Enter to be able to see the menu.

Yes, I know this problem. But, I don't find how fix really fix it. 
It's maybe a Daggerfall engine bug or a DosBox related bug.
The Alt+Enter work good to return to the menu properly. But, the best is to not use the mouse for skip the logo.
